I wanted to share this easy homemade cereal recipe, because I recently made it and have been obsessed! We got 7 bowls of cereal from it! We ate it with our homemade oat milk and added bananas, and boy is it amazing! Even better, it can double as granola in your yogurt (that's what my oldest son did with it!)

Ingredients
1 c chopped pecans to your liking
1 c chopped walnuts to your liking
1 t vanilla
1 t cinnamon
1 t salt
4 c oats
1/2 c melted coconut oil
1/2 c maple syrup
1/4 c honey
Process
Preheat oven to 350 degrees
Chop the walnuts and pecans to your liking.
Combine all dry ingredients in a bowl and mix.
Melt the coconut oil in 30 second increments
Once melted, add the maple syrup and honey, and mix all wet ingredients
Pour over the dry ingredients and mix well, ensuring all pieces are wet
Lay flat on 1-2 baking sheets. Ensure the layer is not thick (this is why you may need a second sheet)
Bake for 20-25 mins and let cool completely. It will hardened more as it cools.
Pour into a bowl with milk and a sliced banana and enjoy!!
Tips
*I stored mine in mason jars in the fridge to keep it fresh. It would probably do just fine in an airtight container on the counter as well.
*You can change this up however you want! Some other things you could add/adjust include:
*Coconut shreds
*Chocolate chips (add these to the final product, not before baking)
*Pumpkin Pie Spice, Cloves, All Spice, Apple Pie Spice, etc.
*Almonds, peanuts, etc
